White Choc Chip Muffins

These are fairly simple and taste GREAT!!

  • 150g Butter
  • 150g Sugar (approx 3/4 cup)
  • 2 Eggs
  • 3/4 Cup Coconut Milk
  • 2 Cups Self Raising Flour
  • 60g Shredded Coconut (approx 3/4 Cup)
  • 1 Pack white choc bits, I use a 250g pkt of Nestle

Beat butter and sugar, add eggs then add rest of ingredients. Mix and cook on about 180-200C.

NB - Don’t over beat & make sure to use papers as chocolate sticks to the pan!

Also these puppies only take about 12-15mins to cook, so keep an eye on them!

One Arm Apple Pie

This recipe for apple pie takes skill and discipline, but the result is awesome!

You will need:

  • 1 tin of sliced baking apple (I prefer Ardmona)
  • 3 slices of puff pastry
  • a pie dish

This is kinda optional but the first step is to put one hand in your pocket and leave it there.

Now… with one arm:

  • Grease the pie dish with butter.
  • Place one sheet of puff pastry on the base of the pie dish and press the pastry up the sides (leave the corners hanging over the edge. You will need to cut of some pastry from the 3rd sheet to fill in the gaps that the square puff pastry has left behind.
  • Open the can of baking apple.
  • Pour the apple from the tin into the pie dish and spread out evenly with a fork.
  • Cover the apple with the second sheet of pastry. Take the base pastry that’s hanging over the side of the dish and fold it on to the top pastry. Cut off any other overhanging pastry and use it to fill in any gaps in the top pastry.
  • Use the leftover third sheet of pastry to decorate.
  • Bake in the oven at 180 C for about 30 minutes or until golden brown.

There you have it, one arm apple pie.

Macaroon Syrup Cake

This cake is awesome…

  • 125g Butter
  • 1 Cup Castor Sugar
  • 4 Eggs
  • 2 Cups Coconut
  • 1 Cup Self Raising Flour

Lemon Syrup Ingredients

  • 1 Cup Sugar
  • 2/3 Cup Water
  • 6 Strips Lemon Rind

Grease a 20cm ring pan, line base with paper; grease paper.

Cream butter and sugar in small bowl with electric mixer until light and fluffy, beat in eggs one at a time, beat until combined. Transfer mixture to large bowl, stir in coconut, then sifted flour. Spread mixture into prepared pan. Bake in 160C oven for about 45mins.

After the cake has cooked for about 25mins start making the syrup:

Combine all ingredients in saucepan, stir over heat without boiling until sugar is dissolved, bring to the boil, reduce heat, simmer uncovered without stirringfor 3 minutes; strain syrup.

Remove cake from oven once finished cooking and leave in pan, pour hot syrup over hot cake, all of it, it may seem like too much but just pour slowly letting it soak in, leave cake to cool in the pan.

Done.

A Caleb Story…

So every night we read Caleb a story from The Big Picture Story Bible and tonight for half an hour I kept asking if he wanted to read the Bible, every other time I ask this question he jumps at the opportunity and almost runs to get over and sit down to hear it.

But tonight he said no everytime and wouldn’t come near me.

So eventually it got to his bed time and I told him that it was time to go, at which point he said “Bible” and ran over and sat down next to me, I laughed really hard and read him the story cause I figure he deserved it, to pull a stunt like that at his age just to stay up a little longer!

Time for a Career Change…

I’m thinking about trying to get into radio… I know, a big aim, but I’m prepared to start low down in the chain, maybe mid morning, or afternoon and then work my way up to the breakfast show. :)

Ok, so I’m not sure that I’m the man for the job, but I’m both willing to learn and to give it a shot!

The reason that I’m putting my hand up is because I think the guys on radio out here at the moment or really ordinary and I’m prepared to be a puppet if that would make things better. Out of the 2 main local stations there is one girl from the breakfast shows that does a good job, the other 3 presenters I’m not so fond of.

There’s a fill in guy at the moment on one station and he so much better than the usual presenter, I hate it when that happens, why don’t they just give this guy the job…

Anyway… So I suppose what I am saying is just give someone else the job… please…

Tropic Thunder

I saw Tropic Thunder the other night and damn it was funny!

the premise for the movie is fantastic, basically it’s the making of the making of a film. It really takes a good dig at Hollywood. Robert Downey Jr’s character is a bit of a take off of Russell Crow (his character is a white Australian actor with a bit of a temper and a strong emphasis on method acting…) essentially he plays a white man playing a black guy throughout the movie and it’s a crack up!

An extra brilliant feature of this film is that it starts without you really knowing it’s started… the movie begins with a (fictional) candy bar ad and some movie previews which again are a wonderful satire of the real things. When the fake previews started everyone in the cinema was like “what the hell is going on?” are they really selling that product/making that move?” and then you get the joke. Brilliant.

This movie is worth your money at the cinema. I was even still laughing on way home when I thought about some of the lines.

P.S. beware some naughty language. Although I should mention here that the movie is not a gross humour style movie… some stupidity yes, but not like the really puerile humour you get with some of the other movies of recent times - you know the ones…

We’ve still got a couple of weeks (in theory), so place your bets!

    The rumours are right…

    On Wednesday the 20th we had a baby boy, Hamish Blake Waghorn…. for all the ladies out there the following statistics are listed:

    7lb 3oz
    49cm
    2.54pm

    I went to work Wednesday morning, did a few things, got a phone call around 10-10:30, took a trip to the hospital, stood stunned trying not to look but having the nurses force me too, and at 2:54pm the little boy popped out.

    There’s a picture on the camera which is still at the hospital so there may be a photo later. But if you’ve seen our other son Caleb then you pretty much haven’t seen this one at all cause they really don’t look alike in my opinion.

    I hear rumours…
